Turkey backs contain a combination of bones, connective tissue, skin and meat that slowly release rich flavor and body as they cook. Simmer them low and slow with your favorite vegetables and herbs for a deeply savory stock you can use throughout the kitchen.

Our turkeys are raised outdoors on pasture at Pat's Pastured, where they have room to forage, explore and express their natural behaviors.
