Something Sweet for Thanksgiving: Homemade Pies & Simple Holiday Recipes

Thanksgiving is about gathering around the table, sharing good food, and making memories with the people we love. But between planning the menu, preparing the turkey, and getting all those side dishes ready, the holiday can come with a pretty lengthy to-do list.

This year, we're helping you check one more thing off that list: dessert!

We're excited to introduce not one, but TWO handcrafted holiday pies to our Thanksgiving collection!  And because we believe good food is even better when shared, we're sharing two simple recipes to help you put the finishing touches on your holiday desserts.

Meet Our New Holiday Pies

🎃Classic Pumpkin Pie

A Thanksgiving tradition for good reason!

Our Pumpkin Pie features a smooth, warmly spiced pumpkin filling nestled in a buttery crust. It's everything you love about this holiday classic, made from scratch in our farm kitchen.

Serve it chilled or at room temperature with a generous dollop of homemade maple whipped cream (recipe below!), and you've got a dessert that feels like Thanksgiving in every bite. Order yours here.

🍎Apple Crumble Pie

For those who prefer apples over pumpkin, we've got you covered!

Our Apple Crumble Pie features tender apples baked beneath a golden, buttery crumble topping. It's the perfect combination of sweet and tart with a bit of a crunch.

Delicious on its own, even better with a scoop of vanilla ice cream, and downright irresistible with a drizzle of homemade caramel sauce.

Both pies are available exclusively through pre-order, and quantities are extremely limited. We're preparing these in small batches, so once we've reached our production capacity, that's it for this holiday season!  Order yours here.

From Chef Ray's Kitchen to Your Holiday Table

If you've enjoyed any of our prepared foods, you already know that Chef Ray takes his recipes seriously.

Our kitchen is all about creating delicious, thoughtfully prepared food using quality ingredients, without unnecessary shortcuts. From our comforting chicken pot pies to our hearty shepherd's pies, every recipe is developed with the same care and attention we'd give a meal prepared for our own families.  Our newest holiday pies are no exception.

Chef Ray has been busy developing, testing, and fine-tuning these recipes, and let's just say the rest of the team hasn't exactly complained about being part of the process!  We've had plenty of taste tests, conversations about flavors and textures, and more than a few requests for another slice.  After plenty of feedback (and a few very full stomachs), we're excited to finally share the results with you.

Like so many things we do here at Pat's Pastured, we're starting small. Our holiday pies are being prepared in limited batches, with a focus on quality rather than quantity.  Whether you're hosting the whole family or bringing dessert to someone else's Thanksgiving table, we're hoping to make your holiday just a little easier—and a whole lot sweeter.

Two Sweet Ways to Make Your Holiday Desserts Even Better

While Chef Ray has handled the baking, he wanted to share a couple of easy ways to dress up your holiday desserts even more. Both recipes use just a handful of ingredients and come together without much fuss. They're delicious with our pies, but they're also wonderful additions to other holiday favorites.

🍁 Recipe #1: Homemade Maple Whipped Cream

The perfect pairing for our Pumpkin Pie!

There's something about real maple syrup that makes a simple dessert feel extra special.

This lightly sweetened maple whipped cream is rich, fluffy, and the perfect complement to a slice of pumpkin pie. Unlike store-bought whipped toppings, it's made with just three ingredients, and you can adjust the sweetness to your liking.

Ingredients:

  • 1 cup cold heavy whipping cream
  • 2 tablespoons pure maple syrup
  • ½ teaspoon pure vanilla extract

Instructions:

  1. Pour the cold heavy whipping cream into a chilled mixing bowl.
  2. Using a hand mixer or stand mixer fitted with a whisk attachment, beat the cream on medium speed until it begins to thicken.
  3. Continue whipping until soft to medium peaks form. Be careful not to over whip!
  4. As medium peaks begin to form, fold in maple syrup, vanilla extract. Fold in softly.
  5. Spoon a generous dollop onto your favorite slice of pie and enjoy.

Chef's Tip - For the best results:

  1. Chill your mixing bowl and whisk for 10–15 minutes before starting. Cold equipment helps the cream whip up faster and hold its shape.
  2. Fold in your add ons after soft to medium peaks form to create a more stable shape.

Make-Ahead Tip: You can prepare this whipped cream a few hours before serving. Keep it covered in the refrigerator and give it a gentle whisk if needed before serving.

Our favorite pairing: A generous spoonful on a slice of Pumpkin Pie, with just a little extra maple syrup drizzled over the top.

🍎 Recipe #2: Homemade Caramel Sauce

The perfect pairing for our Apple Crumble Pie!

Warm apples, buttery crumble topping, and a drizzle of rich homemade caramel? Yes, please!

Our Apple Crumble Pie is delicious on its own, but a little caramel sauce makes it feel extra special.  Whether you're serving it warm with vanilla ice cream or enjoying a slice straight from the refrigerator the next morning (we won't judge!), this simple topping is an easy way to make dessert feel a little more indulgent.

Ingredients:

  • 1 cup granulated sugar
  • ¼ cup water
  • ½ cup heavy cream, warmed
  • 4 tablespoons unsalted butter, Cold (cubed) ½ teaspoon vanilla extract
  • Pinch of sea salt (optional)

Instructions:

  1. Combine the sugar and water in a medium, heavy-bottomed saucepan over medium heat.
  2. Stir gently just until the sugar dissolves. Once the mixture begins boiling, avoid stirring.
  3. Allow the sugar mixture to cook until it turns a deep amber color, carefully watching to prevent burning.
  4. Remove the saucepan from the heat and slowly whisk mixture to incorporate air, and cool slightly.
  5. Slowly stream in the warmed heavy cream. The mixture will bubble vigorously, and appear thick, so be careful.
  6. Add the butter small cubes at a time and stir until completely melted and emulsified.
  7. Stir in the vanilla extract and a pinch of sea salt, if desired.
    • Optional - Thin with water if desired or add more butter for thickness.
  8. Allow the caramel to cool slightly before serving.

Chef's Tip:

  1. Caramel continues to thicken as it cools. For a thinner sauce, gently warm it before serving.
  2. Use a heat proof rubber spatula for less mess, and even mixing on the bottom of the pot.

Make-Ahead Tip: Store in an airtight container in the refrigerator for up to one week. Reheat gently before serving. Easily reheated in the microwave at 30 sec. Increments, stirring in between.

Our favorite pairing: Drizzled over a warm slice of Apple Crumble Pie with a scoop of vanilla ice cream.

A Little Less Cooking. A Lot More Celebrating.

When most people think of Thanksgiving at Pat's Pastured, they think of our pasture-raised turkeys.  And while those birds will always be the centerpiece of our holiday season, we know there's a lot more that goes into putting together a memorable Thanksgiving meal.  That's why we've been working behind the scenes to expand our holiday offerings.

From our pasture-raised Thanksgiving turkeys to Chef Ray's savory holiday favorites—including Cheddar Chive Stuffing and Turkey Pot Pie—and now our handcrafted Pumpkin and Apple Crumble Pies, we're making it easier to bring a delicious, thoughtfully prepared meal to the table.

Our goal isn't to replace your favorite holiday traditions. It's to help make room for them.  Maybe that means letting us handle dessert while you make Grandma's famous stuffing. Or picking up a few ready-to-prepare favorites so you can spend less time cooking and more time with the people you love.  Whatever your Thanksgiving looks like, we're happy to help make it a little easier.
